HOW TO BOIL LIVE LOBSTERS

 

STEP 1: Drown the lobsters in large bucket of fresh water, for approximately 20-30 mins

              until the body is motionless. ALTERNATIVELY, you may place the lobsters in

              the freezer for approximately 10-15 mins before cooking.

 

Note: For frozen lobster, thaw out completely and follow on from STEP 2.

 

STEP 2: In a large cooking pot, add 2 tablespoons of sea salt for every 2 litres (4 pints)

               of water. Lobsters will need to be fully submerged in water during cooking,

               so ensure that you have sufficient water.

STEP 3: Bring the water to a fierce boil.

STEP 4: Carefully place the lobsters headfirst into the boiling water. Cover the pot with

               a lid and once the water has started to boil again, start timing 

Recommended cooking times

600 – 800gm                          9 to 10 minutes
800 – 1000gm                        11 to 12 mins

 

Note! For every 100gm over 1000gm add an additional minute to the cooking time

 

STEP 5: After cooking for required time place the lobsters in ice salt water to cool for

               approximately 20mins, to prevent further cooking

STEP 6: After cooling place the lobsters on its back cover & place in refrigerator,

               or in ice water.

STEP 7: Shelf life is 4 days or wrap in newspaper & plastic and freeze for up

               to 3 months

STEP 8: Enjoy!

 

HOW TO BOIL GREEN/RAW PRAWNS

( Based on 1kg Green/Raw Prawns ).

 

STEP 1: Thaw prawns completely in a bucket of fresh water for approximately

               15-20mins before cooking 

STEP 2: In a large cooking pot, add 2litres (4 pints) of water and 2 tablespoons of

               sea salt and bring to boil.

STEP 3: Bring water to a fierce boil then add prawns. 

STEP 4: Cook for approximately 3-4 minutes with lid off, however as a rule prawns are

               generally cooked when they float to the surface of the water.

 

Note! Prawns should be removed from the heat before the water begins to boil. To test, take out a prawn and hold it to the light, it is cooked when the flesh has shrunk from the shell slightly and the prawn looks translucent.

 

STEP 5: When they’re done, remove them from the boiling water and place in a large

               bowl of iced water and allow to cool for approximately 10mins.

STEP 6: Peel and eat!

 

HOW TO BOIL LIVE BLUE SWIMMER CRABS

 

STEP 1: Drown lobsters in large bucket of fresh water, for approximately 20-30 mins

              until the body is motionless. ALTERNATIVELY, you may place the lobsters

              in the freezer for approximately 10-15 mins before cooking.

 

Note! : You may eliminate STEP 1 if the crabs are already dead

 

STEP 2: Depending on the number of crabs, bring to boil sufficient water to cover

               the crabs complexly and salt accordingly.

STEP 3: Add crabs to boiling water.

STEP 4: Return the water to boil and cook for 5-7 minutes on moderate heat.

STEP 5: Remove crabs from boiling water and place in a big bowl of iced water

               to cool them down.

STEP 6: Enjoy!

 

HOW TO BOIL LIVE GREEN MUD CRABS

(Based on 1 Green/Raw Mud Crab)

 

STEP 1: Place the Mud Crab in the freezer for approximately 15-18 mins

              before cooking.

STEP 2: Place 5litres of tap water in a large pot and add 4-5 tablespoons of

               sea salt. Repeat STEP 1 for every additional Mud Crab.

STEP 3: Add the Mud Crab to boiling water.

STEP 4: Return the water to boil and cook for a further 15-18mins.

STEP 5: Remove the Mud Crab from the boiling water and place in a big bowl

               of iced water.

STEP 6: Enjoy
